Chinese Fried Rice

This is my favorite kind of fried rice! You can prepare it for breakfast, lunch or dinner! I just used Chorizo de Bilbao instead of any other kind of cooked meat. :)




3  cups of rice ( a day old)
2  large eggs,(scrambled and chopped)
1  cup frozen mixed vegetables (corn, carrots and peas)
1  tablespoon butter
1/2 cup chopped cooked meat (chicken, pork, beef, etc)
1  teaspoon garlic, finely chopped
3  tablespoons green onions, chopped
1-2 tablespoons soy sauce
salt and pepper to taste
3  tablespoons oil


Heat wok to medium heat and add-in the oil and chopped garlic.  Then add the frozen vegetables and stir fry for 2-3 minutes.  Add-in the rice and cook it in high heat.  Add-in the chopped meat and butter and continue tossing it mix well.  Add chopped eggs and continue mixing it well. Then add the green onions and stir-fry for another few minutes more. Serve

Sweet Potato Nuggets

This is a simple recipe for a healthy snack! Try it! :)











                 3 sweet potatoes
                   1  egg                                                
                   2-3 tablespoon flour               
                   1/4  teaspoon salt
                   1/4  teaspoon garlic powder
                   1/4  teaspoon paprika
                   oil, for cooking

          1.  Peel sweet potatoes and bring a large of water to boil, add the
          sweet potatoes and cook for around 15 minutes.  Make sure they are
          only slightly softened, not easily mashed as you will need to be able to
          grate these.

          2.  Drain and let them sit for a while until cool enough to handle.  Grate
          with a cheese grater into a mixing bowl then add your egg and mix with
          fork.

          3.  Then add your flour, salt, garlic powder and paprika and mix
          together.

          4.  Pour the oil into a pan to heat.  Use paper towel on a plate to drain
          the veggie nuggets once they are cooked.

          5.  Form your mixture into 1-inch balls and add to the hot oil, be careful
          not to overcrowd the pan.

          6.  Fry until golden each side, then remove with a slotted spoon and
          drain on the paper towel plate.  Then let them cool enough to eat and
          enjoy.        

         

          Ketchup and Mayonnaise Dip:

                   1  cup ketchup
                   1/2  cup mayonnaise
                   2  cloves garlic
                   fresh parsley
                   salt to taste
                   ground black pepper to taste

               Mix together ketchup, mayonnaise and chopped garlic. Add parsley
          then mix.  Season with salt and pepper to taste.

Chocolate Crinkles 2

  It's another recipe of Chocolate Crinkles and it's simpler than the one I made before.  Try it! :)





1 2/3 cups all-purpose flour
1/4  tsp. salt
1/2  tsp. baking soda
1/3  cup cocoa powder
1  cup sugar
2  eggs
2  tbsp.  milk
1/4  cup vegetable oil
2  cups powdered sugar 

     In a bowl, whisk together flour, salt, baking soda, cocoa powder, and sugar.  Make a well in the center and add eggs, sour cream, and oil.  Stir slowly until evenly mixed.  Cover with  plastic wrap and refrigerate for one hour or until firm enough to scoop.
     Preheat oven to 325F.  Scoop some mixture and drop in a bowl of powdered sugar. Completely dredge in sugar and roll into balls.  Arrange on a cookie sheet lined with baking paper.  Bake for about 12 minutes. Let rest for 5 minutes then remove from cookie sheets and let it cool.

Black Sambo

This is my first ever Black Sambo! Just found the recipe on the internet so thought of trying it since I love desserts.  It's still not that perfect so have to practice more! :)














First Layer:

 2  envelopes Knox gelatin
 1  cup cold water
 1  cup condensed milk
 1  can all-purpose cream


Second Layer:

 2  envelopes Knox gelatin
 1  cup cold water
 1/2  cup cocoa powder
 1/2  cup white sugar
 1 1/3 cup evaporated milk


Procedure:

For the first layer:

     Dissolve gelatin on cold water.  Cook over low heat and keep stirring until near-boil.  Gradually add condensed milk and stir for 5 minutes.  Remove from heat then add cream.  Stir until cool.  Transfer to mold and refrigerate for at least 2 hours or until set.

For the second layer:

     Dissolve cocoa powder and white sugar in evaporated milk. Set aside. Then dissolve gelatin on cold water.  Cook over low heat and keep stirring until near-boil.  Add chocolate mixture and stir for 5 minutes.  Let it cool.  Pour over the first layer and refrigerate for at least 2 hours or until set.

Banana Crumb Cupcake

It has the same recipe as in "Banana Cupcake" just it has additional ingredients for the toppings! So try it and enjoy! :)



BANANA CRUMB CUPCAKE
 








10  large ripe bananas (Lakatan)
2 2/3  cups all-purpose flour
2  tsp.  baking powder
10  tbsp. melted butter
2  tsp.  baking soda
20  tbsp.  white sugar
2  tsp. vanilla extract
2  eggs
1/2  tsp. salt

Topping:

1/3  cup brown sugar
2  tbsp. flour
1/8  tsp. cinnamon
1  tbsp. butter


1.  Preheat the oven to 350F.
2.  Mash the bananas.  Set aside.
3.  Combine flour, baking powder, salt, and baking soda in a bowl. Mix it well.  Set aside.
4.  In a large bowl. combine the mashed bananas, butter, eggs, vanilla extract and white sugar. Mix well.
5.  Fold-in the dry ingredients mixture in a large mixing bowl.  Continue this step until the texture becomes smooth.
6.  Arrange regular sized paper cups in the muffin pan.  Scoop the mixture in each paper cup. Do not fill the cups as it will overflow.
7.  For the TOPPINGS:  In a small bowl, mix together brown sugar, flour and cinnamon. Cut in butter until mixture resembles coarse cornmeal. Then sprinkle over cupcakes then bake.
8.  Bake in the oven for 13 to 16 minutes.
9.  Remove from the oven and let cool by placing in a wire rack.

Banana Cupcake









5  Large Ripe Bananas

5  tbsp.  Melted Butter
1 tsp. Baking Soda
10  tbsp. White Sugar

1 Egg

Chocolate Cupcakes

I was craving for cupcakes so decided to make one! :)







1/2  cup Dutch-Processed Cocoa Powder
1  cup boiling water
1 1/3  cups All-purpose flour
2  teaspoons baking powder
1/4  teaspoon salt
1/2  cup butter
1  cup white sugar
2  large eggs
2  teaspoon vanilla extract

Preheat oven to 375 degrees.  Lightly butter, or line 16 muffin cups with paper liners.

In a small bowl, stir until smooth the boiling water and the cocoa powder.  Let cool.

In another bowl, whisk together the flour, baking powder and salt.

Then in a bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Beat in the vanilla extract and the flour mixture.  Then add the cooled cocoa mixture and stir until smooth.

Fill each muffin cup about two-thirds full and bake about 16-20 minutes.

Minatamis na Saging (Banana Plantain in Syrup)

It is one of my favorite dessert called Minatamis na Saging or Sweetened Banana wherein Plantains are cooked in sugar with water..Try it!:)








8  pieces Saba (plantains), sliced
1 1/2  cups brown sugar
3  cups water
1-2  teaspoons vanilla
1/2  teaspoon salt

1.  Heat cooking pot and pour in water then let it boil.
2.  Add brown sugar and stir until diluted.
3. Add salt and vanilla extract and mix well.
4. Put-in the Plaintains  and adjust the heat to medium.  
5. Cover the cooking pot and simmer 8 to 12 minutes or until liquid thickens.
6.  Turn-off heat and allow the plantains to cool.

Hotdog Waffles






This was my second time to try to make Hotdog Waffles.... I just used Hotcake recipe for the batter.  It turned out well but still need to practice more.  You can try it too! Enjoy! :) 




2  cups flour
4  teaspoons baking powder
1/2  cup sugar
1 - 3/4  cups evaporated milk
2 eggs
Hotdogs, sliced in half

Mix all the ingredients except the hotdogs.  Then pour batter in hotdog waffle maker.  Add the sliced hotdogs then pour bit of batter on top of it. Then cook for 6-8 minutes or until brown.

I haven't posted any recipes and pictures here in my blog for such a long time because I have been busy with lots of things here at home.  Anyway, I was able to made some Blueberry Muffins this afternoon for our merienda and really loved it! :)

My First Pan de Sal :)

Pan de Sal is the most popular bread in the Philippines. In Spanish, Pan de Sal means "salted bread".  It is the favorite breakfast food of most Filipinos and you can eat it with different kinds of spreads like Peanut Butter, Liver Spread, Cheese Whiz, etc. You can eat it as it is or dip it in hot coffee or Milo! :)

So, I decided to make one at home.... and this would be my first time to make Pan de Sal and the result is okay but need to practice more.... as what the saying says "Practice Makes Perfect".   This is just a simple recipe and for sure will try it again next time!









PAN DE SAL

1  tablespoon active dry yeast
1  tablespoon white sugar
1 1/4  cups lukewarm water
1 1/2  teaspoons fine salt
3  tablespoons lard or corn oil
4  cups sifted all-purpose flour
1/3  cup sifted all-purpose flour for dusting
1  cup breadcrumbs for rolling

1.  In a large bowl, combine the yeast, 1 tablespoon of sugar and lukewarm water.  Mix well and cover with a damp towel.  Set aside for 10 minutes.

2.  After 10 minutes, add the rest of the ingredients except the 1/3 cup flour and breadcrumbs.  Beat with a wooden spoon until well incorporated.  Transfer the dough to floured surface and knead until smooth.  Transfer the dough to a greased mixing bowl.  Cover once again with a damp towel.  Allow to rise for 1 hour.

3.  Punch down the dough and form it into a log.  Slice it to smaller portions and roll in breadcrumbs. Arrange in greased cookie sheets.  Cover with a towel and allow to rise for another 30 minutes.

4.  Bake at 400 degrees Fahrenheit for 20 minutes or until golden brown.

5.  Serve hot.

Munchkins

 I have found this recipe on the internet and decided to try it at home.  It's just so simple because you don't need to bake it .... just mix all the ingredients and Voila!! :)







1 pack 200 grams Honey Crushed Graham
1 can Condensed milk
powdered sugar

Put the crushed grahams in a bowl.  Add the condensed milk a little at a time until they reach the stickiness you like.  If too dry just add more milk and if it's too sticky just add more crushed grahams.  Now form the mixture into small balls then roll in powdered sugar.  Chill for several hours before eating! :)

Chocolate Sugar Cookies










2  3/4  cups All purpose flour
3/4  cup Unsweetened Dutch Processed Cocoa Powder
1/2  teaspoon salt
1  teaspoon baking powder
1  cup unsalted butter
1  3/4  cup granulated sugar
2  large eggs
2  teaspoons pure vanilla extract

In a large  bowl whisk together the flour, cocoa powder, salt and baking powder.

In a bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until light and fluffy (about 3 to 4 minutes).  Add the eggs, one at a time, beating well after each addition.  Add the vanilla extract and beat until combined.  Add the flour mixture and beat until you have smooth dough.

Divide the dough in half and wrap each half in plastic wrap.  Refrigerate for about one hour or until firm enough to roll.

Preheat oven to 350 degrees Fahrenheit and place rack in the center of the oven.  Line two baking sheets and parchment paper.

Remove one half of the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of 1/4 inch.  (Keep turning the dough as you roll, making sure the dough does not stick to the counter.)  Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to the prepared baking sheets.  Place the baking sheets with the unbaked cookies in the refrigerator for 10 to 15 minutes to chill the dough which prevents the cookies from spreading and losing their shape while baking.

Bake cookies for about 10 - 12 minutes (depending on size) or until they are firm around the edges.  Remove from oven and let cookies cool on baking sheet for a few minutes before transferring to a wire rack to finish cooling.

Makes about 36 - 4 inch cookies.
