Banana Cupcake









5  Large Ripe Bananas
1 1/3  cups All-Purpose Flour
1  tsp. Baking Powder
5  tbsp.  Melted Butter
1 tsp. Baking Soda
10  tbsp. White Sugar
1 tsp.  Vanilla Extract
1 Egg

1.  Preheat the oven to 350F.
2.  Mash the bananas.  Set aside.
3.  Combine flour, baking powder, baking soda in a bowl.  Mix well.  Set aside.
4.  In a large bowl, combine the mashed bananas, melted butter, egg, vanilla, and sugar.  Mix well.
5.  Fold-in the dry ingredients mixture in a large mixing bowl, continue this step until the texture becomes smooth.
6.  Arrange paper cups in the muffin pan.  Scoop the mixture in each paper cup.  
7.  Bake in the oven for 13-15 minutes.
8.  Remove from the oven and let it cool.

Minatamis na Saging (Banana Plantain in Syrup)

It is one of my favorite dessert called Minatamis na Saging or Sweetened Banana wherein Plantains are cooked in sugar with water..Try it!:)








8  pieces Saba (plantains), sliced
1 1/2  cups brown sugar
3  cups water
1-2  teaspoons vanilla
1/2  teaspoon salt

1.  Heat cooking pot and pour in water then let it boil.
2.  Add brown sugar and stir until diluted.
3. Add salt and vanilla extract and mix well.
4. Put-in the Plaintains  and adjust the heat to medium.  
5. Cover the cooking pot and simmer 8 to 12 minutes or until liquid thickens.
6.  Turn-off heat and allow the plantains to cool.

Grilled Banana

Ginanggang, guinanggang, or ginang-gang is a snack food of grilled skewered bananas brushed with margarine or butter and sprinkled with sugar. It originates from the island of Mindanao in the Philippines.





Ginanggang is made from a type of banana in the Philippines called "saba" ( A cooking banana also known as the Cardaba banana ). The banana is peeled, skewered and grilled over charcoals. When the outer surface is lightly charred , it is taken off the grill, brushed with margarine or butter ,and sprinkled with sugar.

Maruya (Banana Fritters)

Maruya (Banana Fritters) is a Philippine delicacy of fried bananas dipped in batter, usually served sprinkled with sugar. It is a popular street food too and it is one of the favorite snack of the Filipinos.





1/2 cup flour
3/4 teaspoon baking powder
1/4 teaspoon salt
3 - 4 ripe saba or cardaba banana , peeled and sliced lengthwise or sliced and shape it like a hand fan
2 cups oil
flour, for dredging
sugar
1 egg
1 cup milk


1. In a bowl, sift together 1/2 cup flour, baking powder and salt . Add milk and egg, beat until smooth.

2. Heat oil in a frying pan (or a large saucepan ) over medium heat.

3. In batches, roll banana slices in flour and dip in batter. Fry in hot oil until golden brown.

4. Drain on paper towels. Roll in sugar.

5. Serve and enjoy!

Saging Nilusak (Pounded Banana)

This is made from pounded banana with sugar and grated coconut. We called it "Bayo Bayo" here in Davao but others call it "Nilupak" ,"Linupak" or "Nilusak".






1 bunch of Banana (saba is the preferred banana in making linupak choose the quite green and yellowish in color or the quite ripe banana)

1 kilo Sugar

4-5 coconuts (then grate the coconut meat)

½ cup Margarine (if needed)


1. First, boil the bananas and wait for about 30 minutes until it is tender.

2. Then, prepare mortar and pestle. Peel the bananas and put it one by one in the mortar.

3. Pound it and add sugar and coconut to sweeten it, mixed them and pound it again until it become sticky.

4. Lastly, you could add some margarine to make it more savory. Just pound it some more and presto!

Banana Cake

Bananas, being abundant and relatively affordable in the Philippines, can be used in a variety of ways. Most everyone takes to the sweet taste of the Filipino banana cake. It is perfect for dessert or snack.





2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/3 cup oil
1 1/3 cups sugar
2 eggs
2/3 cup milk, combined with 1 teaspoon vinegar
1 cup mashed banana

Preheat oven at 300F. Grease baking pan line with baking paper. Set aside.

Sift together flour, baking powder, baking soda, salt and sugar. Put flour mixture in a mixing bowl. Make a well, then add in order - oil, eggs, and milk. Blend well or beat with mixer. Stir in bananas. Bake until golden brown.

Banana Turon




Turon or deep-fried banana rolls is a typical Filipino merienda and dessert. This can usually be seen on the streets being peddled along with banana-que.

This delicious and healthy dessert is an all time Filipino favorite.  Have I mentioned that Turon is so affordable and also easy-to-prepare.




BANANA TURON


Ingredients:
6 pcs Cavendish banana (saba), cut in half (lenghtwise)
1 cup ripe Jackfruit
1 ½ cup brown sugar
12 pcs spring roll wrapper
2 cups cooking oil

Ginanggang . . . . Grilled Banana

Ginanggang is a grilled banana (saba or cardava) on a skewer brushed with margarine and rolled in sugar.  It is way better than maruya or fried saba and it is costs for only 5 pesos.  I always buy 2 sticks of ginanggang for my snack.... : )
