Zesty Beef and Mushroom Spaghetti

My mom tried this recipe from Del Monte using Del Monte's Gourmet Beef and Mushroom Pasta Sauce. Try out this simple yet sumptuous recipe!





6 cloves garlic, crushed
1 piece small onion, minced
1/4 cup ground beef (50 g.)
1/4 cup canned sliced mushrooms
1 pouch Del Monte Beef & Mushroom Pasta Sauce (250 g.)
175 grams Spaghetti, cooked
pieces of hotdog, sliced
grated cheese

Saute garlic, onion, hotdog and beef in 2 tablespoons oil for 4 minutes. Add mushrooms, then saute for 1 minute. Add Del Monte Beef & Mushroom Pasta Sauce, Simmer over low heat for 5 minutes, stirring occasionally. Pour over cooked Spaghetti. Top with cheese.

Tortang Dulong or Dilis

Tortang Dulong or Tortang Dilis ( Anchovies ) is a very simple but tasty dish. It is one of the common Filipino dish that is easy to prepare. This is really goes well with ketchup as dip. Enjoy!




1/4 kilo dulong or dilis (anchovies)
2 eggs
a spoonful of flour
spring onion, chopped
salt and pepper to taste
oil for pan frying


1. Combine eggs, salt, pepper, flour and spring onion then mix it until everything is well incorporated.

2. Add the dulong or dilis.

3. Heat a frying pan and pour-in cooking oil.

4. Once the oil heats-up, scoop about half a cup of the mixture using a kitchen ladle and gently pour it in the frying pan.

5. Cook the first side for about 3 to 5 minutes then flip to cook the other side.

6. Turn off the heat and transfer to a serving plate.

7. Serve with ketchup.

Corned Beef Casserole

This is a macaroni casserole with canned corned beef with creamy mushroom sauce and creamy cheese topping. We tried this recipe some time ago in our presentation in our Caregiver class. I found this recipe in the FOOD Magazine. It is just simple but delicious macaroni dish. Try it! :)



3 cups uncooked elbow macaroni
3 tablespoons oil
4 cloves garlic, minced
3/4 up chopped onions
1 425-gram can button mushrooms, drained and sliced
2 175-gram cans corned beef
1 290-gram condensed cream of mushroom soup
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose cream
1 225-gram bar quick melting cheese, grated


1. Cook macaroni according to package directions. Meanwhile in a medium size wok, heat oil and brown garlic lightly. Add onions and cook until transparent. Add mushrooms and saute for 1 to 2 minutes.

2. Add corned beef, stirring to separate the chunks. When liquid from the corned beef comes out, pour in mushroom soup and water. Season with salt and pepper. Simmer for about 5 minutes.

3. Drain the cooked macaroni. Stir macaroni into corned beef mixture and mix until thoroughly coated. Transfer to a casserole dish.

4. For the topping, place cream and grated cheese in a microwaveable bowl. Microwave on high for 30 seconds. Stir. Repeat for another 30 seconds, stirring every 15 seconds until cheese melts and mixture is smooth. Pour over macaroni and serve.

Tikoy and Cheese Sticks

We made this Tikoy (Nian Gao) and Cheese Sticks on Chinese New Year 2012.

Just slice the Tikoy and cheese in strips and wrapped in lumpia or molo wrapper and fry it. The flavors of tikoy and cheese complement each other! Try it!

My brother ordered a "Durian Cake" from Aleixa's Cakes and Pastries here in Davao. It's really delicious... We ate the whole cake in just one day! So rich and creamy .... sa susunod uli! :)

Chocolate Crinkles

It's one of my favorites cookies... it is soft, fudge like chocolate cookies coated in confectioner's sugar. Absolutely sweet and delicious! :)



3/4 butter or margarine
1 cup sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 cup cocoa
1/4 cup milk with 1 teaspoon calamansi juice (to make into sour milk)
1 tablespoon baking powder
1 teaspoon baking soda
powdered sugar to sprinkle on top of crinkles


Preheat oven at 350F.

Cream butter with the sugar. Beat in eggs, vanilla and sour milk. Sift together the dry ingredients except the powdered sugar and blend in the creamed mixture. Drop by rounded teaspoonfuls onto a greased baking sheet and bake until done (about 13 to 15 minutes). Allow to cool in the sheets and remove when they are firm. Using a strainer, sprinkle top of crinkles with powdered sugar.

Pichi Pichi

Pichi Pichi is another traditional Filipino delicacy made from grated cassava and sugar. It is a gelatinous dessert and can also be eaten as a heavy mid-afternoon snack. The concoction is placed in a mold and steamed until a sticky- gelatinous texture is formed. After steaming, this is coated with grated coconut for additional flavor.





2 cups grated cassava
2 cups white sugar
2 cups water
1 teaspoon lihia

Mix all ingredients and steam for 45-50 minutes. Slice or spoon and roll in grated coconut.

Chocolate Butter Cupcake

This is just a simple recipe that we can serve on special occasions or even just for snacks. We made it on October 31, 2011 for All Saint's Day and brought it in the cemetery to celebrate it with my other relatives. You can use any chocolate frosting that you like to make it more chocolicious! :)


3 cups flour
3/4 cup shortening
1 1/8 cups cocoa
1 1/2 teaspoon baking powder
3/4 teaspoon baking soda
3 cups sugar
3 eggs, whole
1 1/8 cups boiling water
1 1/2 teaspoon vanilla
1 1/8 cups buttermilk ( milk + 1 tbsp. vinegar )

Sift dry ingredients together. Cream the shortening, adding the sugar gradually until light and fluffy. Add eggs one at a time, beating well after each addition. Add melted chocolate. Add flour alternately with buttermilk and water. Add vanilla. Pour into prepared pan. Bake at 350F for 40 - 50 minutes.
