Chinese Fried Rice

This is my favorite kind of fried rice! You can prepare it for breakfast, lunch or dinner! I just used Chorizo de Bilbao instead of any other kind of cooked meat. :)




3  cups of rice ( a day old)
2  large eggs,(scrambled and chopped)
1  cup frozen mixed vegetables (corn, carrots and peas)
1  tablespoon butter
1/2 cup chopped cooked meat (chicken, pork, beef, etc)
1  teaspoon garlic, finely chopped
3  tablespoons green onions, chopped
1-2 tablespoons soy sauce
salt and pepper to taste
3  tablespoons oil


Heat wok to medium heat and add-in the oil and chopped garlic.  Then add the frozen vegetables and stir fry for 2-3 minutes.  Add-in the rice and cook it in high heat.  Add-in the chopped meat and butter and continue tossing it mix well.  Add chopped eggs and continue mixing it well. Then add the green onions and stir-fry for another few minutes more. Serve

Chocolate Crinkles 2

  It's another recipe of Chocolate Crinkles and it's simpler than the one I made before.  Try it! :)





1 2/3 cups all-purpose flour
1/4  tsp. salt
1/2  tsp. baking soda
1/3  cup cocoa powder
1  cup sugar
2  eggs
2  tbsp.  milk
1/4  cup vegetable oil
2  cups powdered sugar 

     In a bowl, whisk together flour, salt, baking soda, cocoa powder, and sugar.  Make a well in the center and add eggs, sour cream, and oil.  Stir slowly until evenly mixed.  Cover with  plastic wrap and refrigerate for one hour or until firm enough to scoop.
     Preheat oven to 325F.  Scoop some mixture and drop in a bowl of powdered sugar. Completely dredge in sugar and roll into balls.  Arrange on a cookie sheet lined with baking paper.  Bake for about 12 minutes. Let rest for 5 minutes then remove from cookie sheets and let it cool.

Banana Crumb Cupcake

It has the same recipe as in "Banana Cupcake" just it has additional ingredients for the toppings! So try it and enjoy! :)



BANANA CRUMB CUPCAKE
 








10  large ripe bananas (Lakatan)
2 2/3  cups all-purpose flour
2  tsp.  baking powder
10  tbsp. melted butter
2  tsp.  baking soda
20  tbsp.  white sugar
2  tsp. vanilla extract
2  eggs
1/2  tsp. salt

Topping:

1/3  cup brown sugar
2  tbsp. flour
1/8  tsp. cinnamon
1  tbsp. butter


1.  Preheat the oven to 350F.
2.  Mash the bananas.  Set aside.
3.  Combine flour, baking powder, salt, and baking soda in a bowl. Mix it well.  Set aside.
4.  In a large bowl. combine the mashed bananas, butter, eggs, vanilla extract and white sugar. Mix well.
5.  Fold-in the dry ingredients mixture in a large mixing bowl.  Continue this step until the texture becomes smooth.
6.  Arrange regular sized paper cups in the muffin pan.  Scoop the mixture in each paper cup. Do not fill the cups as it will overflow.
7.  For the TOPPINGS:  In a small bowl, mix together brown sugar, flour and cinnamon. Cut in butter until mixture resembles coarse cornmeal. Then sprinkle over cupcakes then bake.
8.  Bake in the oven for 13 to 16 minutes.
9.  Remove from the oven and let cool by placing in a wire rack.

Banana Cupcake









5  Large Ripe Bananas
1 1/3  cups All-Purpose Flour
1  tsp. Baking Powder
5  tbsp.  Melted Butter
1 tsp. Baking Soda
10  tbsp. White Sugar
1 tsp.  Vanilla Extract
1 Egg

1.  Preheat the oven to 350F.
2.  Mash the bananas.  Set aside.
3.  Combine flour, baking powder, baking soda in a bowl.  Mix well.  Set aside.
4.  In a large bowl, combine the mashed bananas, melted butter, egg, vanilla, and sugar.  Mix well.

Chocolate Cupcakes

I was craving for cupcakes so decided to make one! :)







1/2  cup Dutch-Processed Cocoa Powder
1  cup boiling water
1 1/3  cups All-purpose flour
2  teaspoons baking powder
1/4  teaspoon salt
1/2  cup butter
1  cup white sugar
2  large eggs
2  teaspoon vanilla extract

Preheat oven to 375 degrees.  Lightly butter, or line 16 muffin cups with paper liners.

In a small bowl, stir until smooth the boiling water and the cocoa powder.  Let cool.

In another bowl, whisk together the flour, baking powder and salt.

Then in a bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Beat in the vanilla extract and the flour mixture.  Then add the cooled cocoa mixture and stir until smooth.

Fill each muffin cup about two-thirds full and bake about 16-20 minutes.

Hotdog Waffles






This was my second time to try to make Hotdog Waffles.... I just used Hotcake recipe for the batter.  It turned out well but still need to practice more.  You can try it too! Enjoy! :) 




2  cups flour
4  teaspoons baking powder
1/2  cup sugar
1 - 3/4  cups evaporated milk
2 eggs
Hotdogs, sliced in half

Mix all the ingredients except the hotdogs.  Then pour batter in hotdog waffle maker.  Add the sliced hotdogs then pour bit of batter on top of it. Then cook for 6-8 minutes or until brown.

Pancit Lomi

Lomi or Pancit Lomi  is a Filipino - Chinese dish made with a variety of thick fresh egg noodles of about a quarter of inch in diameter, soaked in lye water to give it more texture.  Because of its popularity in the eastern part of Batangas, there as many styles of cooking lomi as there are eateries, panciteria or restaurants offering the dish.  Variations and quality are therefore very common.





1/2 k. of lomi noodles
1 c. of diced cooked chicken meat
1 carrot, julienned
1 c. of diced leeks (white and light green parts only)
7 c. of chicken broth (unsalted)
2 eggs, beaten
1 tbsp. of cooking oil
1 tbsp. of finely minced garlic
1 onion, halved and sliced thinly
1/2 tsp. of sesame seed oil
salt and pepper to taste


Heat a casserole. Pour in the cooking oil. Saute the garlic and onion until fragrant. Add the julienned carrot and stir for 30 seconds. Add the chicken meat and continue cooking over high heat for another 30 seconds. Pour in the chicken broth and bring to a boil. Add the egg noodles and simmer for 10 minutes. Season with salt and pepper. Add the leeks. Pour in the beaten eggs in a thin stream, stirring continuously. Turn off the heat and stir in the sesame seed oil. Serve hot.

Lengua de Gato

Lengua de Gato are long thin cookies that resembles the shape of a cat’s tongue. This might be the reason why these tasty treats were called such.

This is my first time I tried Lengua de Gato... and will try it again next time.  :)


.




1  cup all-purpose flour
1/2  cup super fine white sugar
whites from 2 eggs
1/4  teaspoon salt
1/2  cup butter, softened
1/2  teaspoon vanilla extract


1.  Preheat oven to 375F.


2.  Cream the butter using an electric mixer then gradually add the sugar.  Continue mixing for another 2 minutes.


3.  Stir-in the egg whites gradually and mix about 3 to 4 minutes more.


4.  Add salt and vanilla extract.


5.  Gradually stir-in the flour.  Continue to mix for about 2 to 3 minutes more or until the mixture is well incorporated.


6.  Get a piping bag and install a round tip.  Place the mixture in the piping bag.


7.  On a baking tray lined with wax or parchment paper, begin piping the mixture.  Each piece should be about 2.5 to 3 inches in length.


8.  Bake for 9 to 10 minutes.


9.  Remove from the oven and place in a cookie rack until the temperature cools down.


10.  Place in a container and serve.

Maja Blanca with Corn

Maja Blanca is a Filipino dessert made primarily from coconut milk.  Also known as coconut pudding.  It is usually served during fiestas and other holidays, especially Christmas.

I made it yesterday morning just for our snack here at home! :)







4  cups coconut milk
1  cup cornstarch
14  oz. condensed milk
3/4  cup fresh milk
3/4  cup granulated sugar
15  oz. whole sweet kernel corn
5  tablespoons grated coconut

1.  Pour the coconut milk in a cooking pot and bring to a boil.
2.  Add the sugar, condensed milk, and whole sweet kernel corn then stir until all the ingredients are evenly distributed.
3.  Simmer for 8 minutes.
4.  Combine fresh milk and cornstarch then whisk until the cornstarch is diluted.
5.  Pour the fresh milk and cornstarch mixture in the cooking pot and stir thoroughly.
6.  Allow to cook while stirring until the mixture reaches your desired thickness.
7.  Pour the  mixture in a serving tray then arrange and flatten the top using a flat tool such as wooden spatula.
8.  Cool down then refrigerate for at least 1 hour.
9.  Garnish with toasted grated coconut.
10.  Serve cold.

Grilled Banana

Ginanggang, guinanggang, or ginang-gang is a snack food of grilled skewered bananas brushed with margarine or butter and sprinkled with sugar. It originates from the island of Mindanao in the Philippines.





Ginanggang is made from a type of banana in the Philippines called "saba" ( A cooking banana also known as the Cardaba banana ). The banana is peeled, skewered and grilled over charcoals. When the outer surface is lightly charred , it is taken off the grill, brushed with margarine or butter ,and sprinkled with sugar.

Maruya (Banana Fritters)

Maruya (Banana Fritters) is a Philippine delicacy of fried bananas dipped in batter, usually served sprinkled with sugar. It is a popular street food too and it is one of the favorite snack of the Filipinos.





1/2 cup flour
3/4 teaspoon baking powder
1/4 teaspoon salt
3 - 4 ripe saba or cardaba banana , peeled and sliced lengthwise or sliced and shape it like a hand fan
2 cups oil
flour, for dredging
sugar
1 egg
1 cup milk


1. In a bowl, sift together 1/2 cup flour, baking powder and salt . Add milk and egg, beat until smooth.

2. Heat oil in a frying pan (or a large saucepan ) over medium heat.

3. In batches, roll banana slices in flour and dip in batter. Fry in hot oil until golden brown.

4. Drain on paper towels. Roll in sugar.

5. Serve and enjoy!

Corned Beef Casserole

This is a macaroni casserole with canned corned beef with creamy mushroom sauce and creamy cheese topping. We tried this recipe some time ago in our presentation in our Caregiver class. I found this recipe in the FOOD Magazine. It is just simple but delicious macaroni dish. Try it! :)



3 cups uncooked elbow macaroni
3 tablespoons oil
4 cloves garlic, minced
3/4 up chopped onions
1 425-gram can button mushrooms, drained and sliced
2 175-gram cans corned beef
1 290-gram condensed cream of mushroom soup
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose cream
1 225-gram bar quick melting cheese, grated


1. Cook macaroni according to package directions. Meanwhile in a medium size wok, heat oil and brown garlic lightly. Add onions and cook until transparent. Add mushrooms and saute for 1 to 2 minutes.

2. Add corned beef, stirring to separate the chunks. When liquid from the corned beef comes out, pour in mushroom soup and water. Season with salt and pepper. Simmer for about 5 minutes.

3. Drain the cooked macaroni. Stir macaroni into corned beef mixture and mix until thoroughly coated. Transfer to a casserole dish.

4. For the topping, place cream and grated cheese in a microwaveable bowl. Microwave on high for 30 seconds. Stir. Repeat for another 30 seconds, stirring every 15 seconds until cheese melts and mixture is smooth. Pour over macaroni and serve.

Tikoy and Cheese Sticks

We made this Tikoy (Nian Gao) and Cheese Sticks on Chinese New Year 2012.

Just slice the Tikoy and cheese in strips and wrapped in lumpia or molo wrapper and fry it. The flavors of tikoy and cheese complement each other! Try it!

Durian Cake

My brother ordered a "Durian Cake" from Aleixa's Cakes and Pastries here in Davao. It's really delicious... We ate the whole cake in just one day! So rich and creamy .... sa susunod uli! :)
